CHEWING:⁠ The wheat starts off a little salty and a bit like sunflower seeds. The starch dries the tongue and gives a cracker flavor. Barely sweet at all until you get towards the end. It is reminiscent of Great Gramma's baking powder biscuits.⁠

HOT STEEP:⁠ It may start off underwhelming, but the flavor bursts out like a Derby stallion. It is bright. Sweet and tart like summer stone fruit with lots of citrus peel. The grain lends a velvety mouthfeel with starch reminding you of shortcake or flaky pie crust. The finish is biscuity with hay lingering on the tongue. Overall, the Cascadia White Wheat brings memories of madelines with orange zest and a peach cobbler.⁠
